home and professional chefs, and fed millions of restaurant guests
in my career. So whether I am training foodservice clients in Strasbourg,
teaching culinary students in Frankfurt, or feeding guests at my flagship
restaurant north of Chicago, I am repeatedly asked: Which brand
of kitchen tools is best? What culinary techniques do I need to know?
How can I cook like a Master? Because of my expertise, I am expected
to promptly divulge definitive, one-size-fits-all answers. My expertise
is precisely why I don't.
